“Moistest” Banana Cake Ever

Ingredients

250g unsalted butter
200g to 300g of sugar, depending on the sweetness of the banana
4 eggs
1 teaspoon vanilla essence
4 tablespoons milk
1 and a 1/2 cups of mashed bananas, roughly about 4 bananas
250g plain flour
1 teaspoon bicarbonate soda
1 teaspoon baking powder
1/4 teaspoon of salt

Method

1. Cream the butter and sugar until well mixed and then add in the eggs, essence, milk and mix well again.

2. Add in the mashed bananas and mix well.

3. Sift the flour, bicarbonate soda, baking powder and salt.

4. Fold in the flour mixture.

5. Bake at 160 degrees celsius for 1 hour. If you feel that the cake is browning too quickly, cover it with an aluminium foil.

What’s On My Mind… 

I mean, seriously, banana cakes are one of the easiest cakes to bake and you get a really moist and delicious end product, but more often than not, we can’t get the sweetness and consistency right due to the changes in the moisture and sugar in the banana itself. Nevertheless, this recipe is great and you should try it. You get a relatively huge cake from this recipe, so I would suggest using half a portion of the ingredients to get a smaller cake. My mum first tried this recipe and later, she shared it with me. She found it on a website called bakericious.blogspot.com.

Simple Muah Chee

Ingredients

150g glutinous rice flour
225ml water
2 teaspoons of sugar
1/4 teaspoon salt
1 tablespoon oil
ground peanuts and sugar according to your taste

Method

1 . Mix all the ingredients in a bowl until smooth and then place in a steamer.

2. Steam for about 15 minutes.

3. Cut up the cooked muah chee and mix it in the peanut and sugar mixture.

What’s On My Mind…

This is another personal favourite snack I had as a kid. It cost $1 and thoroughly enjoyed it. I just had the mood to try making my own one day and I think that was the best muah chee I have ever had in my life so far. The consistency you get is so soft and perfectly chewy that you can’t stop eating it. Try it and share it with your friends and family.

The Perfect Lemon Chiffon Cake

Ingredients

6 egg yolks
40g sugar
50ml lemon juice
50ml oil
1/2 teaspoon lemon essence
1/4 teaspoon salt
zest of 1 lemon
90g cake flour
6 egg whites
100g sugar
1/4 teaspoon cream of tar tar

Method

1 . With a blender, blend the yolks and 40g sugar till it is well blended.

2. Then add the juice, oil, essence, salt and set and blend well.

3. Add the flour and blend.

4. With a clean bowl and blender, whisk the egg whites and cream of tar tar till they are slightly stiff. Then add in the sugar and blend till it becomes stiff and glossy, basically creating soft peaks.

5. Lastly, carefully fold in the egg whites into the batter and pour the batter into a 21cm chiffon cake tin. Bake at 160 degrees celsius for 40 minutes.

VARIATION: Substitute the lemon ingredients with orange ingredients and you will get Orange Chiffon Cake.

What’s On My Mind…

I actually started by trying to bake the Orange Chiffon Cake you see below. The recipe was from thedomesticgoddesswannabe.com and I loved it so much that I thought, “why not try the same recipe but with lemon instead?“

The result was simply amazing. Everyone preferred the lemon version as compared to the orange. It just gave a great balance between sweet and sour which made it such a crowd pleaser!
